Clara brings the sweetness and the care. Trained in French pâtisserie, she is the architect of the dessert course and the guardian of the table experience — from the first pour to the last crumb. Her touch is precise, her instinct for hospitality, natural.
Mathis — Head Chef, French Cuisine
Mathis is the flame. His cooking draws from the rigour of French culinary tradition and the produce of Australia — a meeting point that defines La Maison C&M's identity. Every plate is built with intention, every flavour placed with purpose.
Our Experience
Trained in France, the two honed their craft across some of the country's finest establishments — including Baumanière (3 Michelin stars), U Capu Biancu (4-star hotel) and Bottero (1 Michelin star). They then took their skills to Canada for two years, working notably at Wild Blue in Whistler, ranked 47th on the 50 Best Restaurants North America. Now based in Australia and working independently, they channel every one of those experiences into La Maison C&M — with one goal: the best possible experience for every guest. Throughout their training, Clara and Mathis also competed in prestigious culinary competitions, including the AEHT, La Cuillère d'Or, and Les Disciples d'Escoffier.
Clara and Mathis worked together at Banubanu Beach Retreat & Lodge, in the Northern Territory of Australia — where Mathis led the kitchen as Head Chef and Clara managed front-of-house. It is there that the vision of La Maison C&M truly took shape, with the full support of the Banubanu team behind this new venture.

La Maison C&M ("we", "us", "our") is committed to protecting your personal information. This policy explains how we collect, use, and safeguard your data when you contact us or use our services.
Information We Collect
We collect personal information that you provide directly to us, including your name, email address, phone number, event date, and any details you share through our enquiry form.
How We Use Your Information
We use your information solely to respond to your enquiries, plan and deliver our services, and communicate with you regarding your booking. We do not sell or share your personal data with third parties.
Data Retention
We retain your personal information only for as long as necessary to fulfil the purposes outlined in this policy, or as required by Australian law.
Your Rights
You have the right to access, correct, or request the deletion of your personal data. To exercise these rights, please contact us at maison.privatechef@gmail.com.
Once we have agreed on your date, menu and the number of guests, a 30% deposit of the quoted amount is payable within 72 hours of that agreement. Your booking is not confirmed, and no date is held, until this deposit is received and confirmed in writing by email.
Full and final payment is due no later than 7 days prior to the event. Bookings made within 7 days of the event require full payment at the time of booking.
If the deposit is not received within 72 hours, the quoted date, menu and price are no longer guaranteed and the booking will be treated as unconfirmed. We are not liable for any loss arising from a booking not being confirmed in these circumstances.
If you request a change to the booking (including guest numbers, menu items, timing or location), the change is subject to availability and will only take effect once we confirm it in writing. We will charge for any resulting difference in cost, and no requested change is binding on us until confirmed.
We reserve the right to decline, or to refuse to proceed with, any booking at any time where we reasonably consider that the requested service cannot be provided safely, legally, or to the standard we require.
2. Payment
All prices are quoted in Australian dollars (AUD). Payment is due by the method and date specified in your invoice.
Any amount not paid by its due date will attract interest at 2% per month (or part thereof) on the outstanding balance, calculated daily, until paid in full. We reserve the right to suspend or cancel any booking with an outstanding payment, without further notice.
You are responsible for all bank, transfer or currency conversion fees associated with payment.
3. Cancellations
If you cancel a confirmed booking more than 14 days before the event, your deposit will be refunded in full. If you cancel with less than 14 days but greater than 7 days, we will refund 50% of your deposit. If you cancel less than 7 days before the event, the full quoted amount remains payable and is non-refundable, regardless of amounts already paid.
We will use reasonable efforts to help you secure an alternative date following a cancellation, but we are under no obligation to do so, and any rescheduled booking is subject to availability and may be repriced.
4. Force Majeure & Cancellation by Us
We reserve the right to cancel or substantially modify a booking where we are prevented from performing it, in whole or in part, by circumstances beyond our reasonable control. This includes, without limitation, serious illness or accident affecting Clara, Mathis or key staff, unsafe conditions, extreme weather, fire, flood, government or public health restrictions, supply shortages, utility failures, or any other event beyond our reasonable control.
Where we cancel or substantially modify a booking under this clause, our sole obligation to you is, at our discretion, to offer a rescheduled date or to refund amounts paid for the specific services that cannot be provided. We are not liable for any other loss, cost or damage arising from such cancellation or modification, including third-party costs you may have incurred.
5. Guest Numbers & Service
For seated dinners, we cater for between 4 and 20 guests. For canapé events, we cater for 10 to 60 guests. Numbers outside these ranges will only be accepted where we confirm in writing that the booking is feasible.
For seated dinners with fewer than 6 guests, a service fee of AUD $200 applies. For 6 guests and above, front-of-house service is included in the quoted price.
For canapé events, service is not included in the base price. Additional servers can be added at AUD $200 per server.
Final guest numbers must be confirmed in writing no later than 7 days before the event. This confirmed number is the minimum number you will be charged for, regardless of how many guests actually attend.
6. Additional Charges
Additional charges apply, on top of the quoted price, for: travel outside our standard service area (more than 30km from Melbourne CBD); parking and toll fees; additional staff; additional service time; special equipment hire; changes to the agreed menu, guest numbers or service; and any other item agreed in advance.
We will notify you of additional charges before they are incurred wherever reasonably practicable. Charges that are unavoidable or arise on the day of the event (such as parking) remain payable even where advance notice was not practicable.
7. Dietary Requirements
All allergies, intolerances and dietary requirements must be provided to us in writing at the time of booking, and in any event no later than 7 days before the event. We are not responsible for accommodating any requirement notified after this time or on the day of the event.
We will take reasonable care to prepare dishes in accordance with declared dietary requirements. However, our services are often performed in private domestic kitchens where we cannot guarantee an allergen-free environment and cannot eliminate the risk of cross-contact. By proceeding with the booking, you accept this risk on behalf of yourself and your guests.
Where a guest has a severe or life-threatening allergy, you must discuss this with us before confirming the booking. We reserve the right to decline any dietary request we reasonably believe cannot be safely accommodated.
8. Kitchen Preparation & Venue Access
You are responsible for providing, at your own cost: a safe and functional kitchen; electricity; running water; an empty section of the fridge; suitable preparation space; and any equipment agreed to be supplied by you.
You must inform us, no later than 7 days before the event, of any unusual access conditions, including stairs, restricted parking, security access, apartment or building restrictions, or limited kitchen facilities.
Where the kitchen or facilities are materially unsuitable or unsafe, we reserve the right to modify the service, menu or preparation method, or to decline to proceed with the booking, without liability for any resulting change to the guest experience.
9. Seasonal Menus
Our menus are built around seasonal produce and market availability. We will consult with you to design a menu suited to your event; however, we reserve the right to substitute ingredients or dishes of equivalent standard and value where required by seasonal availability, and to make reasonable adjustments to preparation and presentation where required by the facilities available at the venue.
10. Damage & Breakages
You are responsible for loss of, or damage to, our equipment, utensils or other property caused by you or your guests, except where the damage results from our negligence. You will reimburse us for the full replacement or repair cost of any such loss or damage within 14 days of invoice.
We are not responsible for any pre-existing damage or defect in property, equipment or facilities supplied by you.
11. Recipes, Menus & Intellectual Property
All recipes, menus, dish concepts, presentation styles and other materials created or used by us remain our intellectual property. Nothing in these Terms grants you a licence to reproduce, publish or commercially exploit our recipes, menus or branding without our prior written consent.
12. Photography & Marketing
We reserve the right to take photographs of food, table settings and our work at your event for our portfolio and marketing purposes. We will not knowingly use identifiable photographs of you or your guests for marketing purposes without your consent. If you do not want us to photograph the event or food for marketing purposes, you must tell us in writing before the event.
13. Limitation of Liability
We will provide our services with reasonable care and skill. Nothing in these Terms excludes, restricts or modifies any consumer guarantee, right or remedy that cannot lawfully be excluded, restricted or modified under the Australian Consumer Law (ACL) or other applicable legislation.
To the maximum extent permitted by law: our total liability to you is limited to the total amount paid by you for that booking; we are not liable for any indirect, consequential or special loss or damage; and we are not responsible for loss or damage arising from circumstances outside our reasonable control.
14. Indemnity
You agree to indemnify us against any loss, damage, cost, fine or claim arising from: your breach of these Terms; a failure to disclose accurate information (including dietary requirements or venue access conditions); or the actions of you or your guests, except to the extent caused by our negligence or breach of these Terms.
15. General
These Terms, together with the agreed quote and any written confirmation, constitute the entire agreement between us. We may update these Terms from time to time; the Terms in force at the time your deposit is paid apply to your booking. These Terms are governed by the laws of Victoria, Australia, and any dispute is subject to the exclusive jurisdiction of the courts of Victoria, Australia, subject to any rights you may have under Australian consumer protection legislation.
